Delicious and Super Healthy Zesty Quinoa Salad

I had never tried quinoa before until a few days ago when we had a potluck with my son’s homeschool group that we are members of (and love dearly). One of the ladies made this so I decided that I was going to try it. It was colorful and looked delectable. (I’m going to use all big words to dramatically describe it so that I can emphasize just how amazing it was).

I gobbled it right up and couldn’t get enough. I did not try a bite of the tomatoes because they gross me out raw like that (even though I love bruschetta). I am sure they make it wonderful for those who do love tomatoes. The cumin makes the salad taste as though it has a chili flavor, while the lemon and red pepper gives it just enough kick to create a bold and zesty flavor. Quinoa is a super-food, so it’s really a win-win. The black beans provide a good source of protein and this meal can be easily done for meal-prepping as it makes a large batch and can store well.

I immediately went home and bought all of the ingredients (after hounding her for the recipe). So I whipped it up and love it so much that I want to share the recipe with you guys. I originally got this recipe from AllRecipes, but altered it by removing the tomatoes. I’ll include those in mine, too.

Zesty Quinoa Salad

Ingredients
  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans rinsed & drained
  • 2 teaspoons ground cumin
  • 2 limes freshly juiced
  • 1.5 cups cherry tomatoes halved
  • 1/4 cup cilantro
  • 5 green onions finely chopped
  • 1 teaspoon salt
  • 1/4 cup olive oil extra virgin
  • 1/2 teaspoon red pepper flakes
  • salt and pepper to taste
Instructions
  1. Bring quinoa and water to a boil, then reduce to a medium-low simmer and simmer while covered for about 15 minutes. Once it is finished, remove it from the heat and allow to cool.

  2. While waiting on the quinoa, mix together the olive oil, cumin, red pepper flakes, salt and lime juice.

  3. Mix together the cherry tomatoes, green onions and black beans and add to the cooled quinoa. Pour the dressing over top then add your cilantro and toss to coat.

  4. Serve immediately or cooled.

This dish is one of those that I just can’t get enough of. I can’t eat just a few bites because it has so many good flavors that compliment one another, but you can taste each and everyone in the recipe.
