Copycat Costco Rotisserie Chicken
You guys! My co-worker introduced me to Costco’s Rotisserie Chicken Salad and I was instantly addicted. Since I am a single mom – with a child who doesn’t eat what I eat most of the time, I don’t have the need for a membership to Costco, nor do I need the size they sell it in.
So I decided to make my own. I found a recipe for how to make rotisserie flavored/style chicken and then I found one for the salad version. I don’t recall the source for the first one, but I altered Kitchen Cheetah’s recipe for the salad.
I did not make pictures along the way, but you get the idea. Maybe I’ll add some later, for good measure.
Here is the recipe in its entirety:
- 1.5 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp dried thyme
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/2 tsp salt
- 1+ lbs. chicken tenders

Preheat oven to 350 degrees. Spray foiled covered pan with oil (lightly/optional if you use non-stick foil).

Mix all ingredients in a small bowl then sprinkle the tenders on all sides.

Place tenders in a single layer then bake for 15-20 minutes.

Let cool before shredding.
- 1+ lb rotisserie chicken
- 1 c finely diced celery
- 1/3 c finely minced sweet onion
- 1/2 c Duke's mayo
- 1/2 tsp freshly ground pepper
- 1/2 tsp seasoned salt (optional)

Hand shred the chicken then mix with all ingredients well.

Serve chilled on Hearts of Romaine lettuce to make a lettuce wrap.
